I used Wema Reed switches sensors for my fresh and gray water tanks. This type of level sensors encased in a corrosion material immune to urea would work, it is not rocket science. Knowing how important DEF is for reliability of emission control I am amazed that my van doesn’t have one, Wema is just an example of possible implementation.

Actually, my understanding is that Sprinter DEF tanks DO have level sensors. I think they are something like 5 of them at fixed intervals (capacitive sensors most likely). Between measured values, the ECU interpolates based on miles driven. The Star system can display the level. It is only the display on the console that is missing on older Sprinters. New ones have such displays.

Oddly, my MY2014 has a menu item that shows a "miles to empty" for DEF. I have never heard of another Sprinter with this style of display. Sadly, it is absurdly inaccurate--I think it adds a constant 20,000 miles to the actual value. I've been meaning to try to correct it with my clone Star system.

I never had any indications about DEF level, no dummy lights, gauges, warnings, messages, none. Maintaining the DEF with caution I never had to add more than 2 gal. (3.2 gal. tank) indicating that tank was always over 35-40% full. These level sensors could be active below these levels or system is malfunctioning.

While installing my fresh water tank under the sliding door I noticed signs of previous installation of something, cleaned tapped holes, tabs imprints in the undercoat, likely a large tank was there at some point of manufacturing in Germany (passenger van). My 2013 van was ordered in last months of 2012, perhaps small DEF tank under the hood was rare and MB mounted large tanks on all passenger vans. Was rewiring done right at the factory? I still have an active emission warranty and am contemplating to address it before expiration.

Yes, that is to be expected. As far as I know, they only started exposing the DEF level to the driver in the last few years (my van excepted, for some reason). That doesn't prove the sensors aren't there. I bet your dealer could read your DEF level.

I have a 2016 MB Sprinter 3500 and it has a DEF gauge. I keep it topped off.
I have never experienced a problem. I have 50K miles mostly freeway.
