Interesting to see this topic brought to the fore. Nowadays, in things like oatmeal, I use Now Foods Organic Soy Milk Powder.

Unsweetened Edensoy is also a good option for me. The ingredient list is simple: Purified Water, Organic Soybeans. That's all. I can't get it locally though and delivery problems included burst containers and, during winter, arriving frozen! The soy milk powder is just easier to get for me.

For us, the length of a boondocking session is determined by how long the gallon of fresh cow milk lasts. Milk thirst is real and can only be satisfied by milk. That’s besides the yogurt I make myself, even on the road.

Homemade kefir milk is also amazing. Would be cool if I could make it on the road.

The good news is that kefir would love all that highway rockin and rollin. IMO the major concerns with making kefir in our Ranger RT 190 would be storage space and keeping the grains safe from external bacteria. And glass jars, nylon mesh and nylon strainer would need to be washed with every batch, meaning lots of hot water.

I make the yogurt in the Instant Pot. Instead of rockin' and rollin', I have to choose a day when the van is stationary. I strain with a paper towel over a pasta strainer. I clean with a damp paper towel.

I buy for home and van use Almond milk from Costco. It is good enough for me with cereal. It efficiently stores in a brick shaped container needing no refrigeration. The one currently in use I put in the refrigerator after opening.
