I wonder what the "warm up" time to full output is on the fuel cells?

If they were fast enough to cover the starting of high load stuff like an air conditioner, you would hardly need any batteries at all.

If they are slower, you would need to use them like a generator, turning on ahead of use, which is still not much of big deal.

The 3K would be nice, that is for sure.
